Most of Laguna Niguel was built as a planned community in the later twentieth century, on ridges and canyons. Neighborhoods range from family streets around the parks to guard-gated hillside communities such as Bear Brand Ranch, where custom homes sit on large lots. Many houses have had the kitchen rebuilt around a full set of built-in appliances.

A full set usually means a refrigerator column and a freezer column, often a wine column beside them, a range or rangetop with wall ovens or a steam oven, a microwave drawer, and one or two dishwashers. Each fails in its own way.

Hard water and scale

Orange County water is hard, and in a kitchen like this it runs through many machines. Scale builds slowly, and the first signs are small: smaller cubes, weaker steam, filmed glasses.

• Ice makers and water valves. Minerals and debris narrow the inlet screen and wear the valve, so ice comes slowly or the cubes shrink. A new filter when the display asks does not soften the water, so in hard water the valve or its screen can still need replacing. See Sub-Zero ice maker not working.
• Steam and combi-steam ovens. The oven keeps track of its steam use and asks for descaling. Put it off and scale reaches the pump and the steam generator, which is behind most steam oven repairs. See Wolf steam oven repair and the descaling guide.
• Dishwashers. Miele dishwashers soften their own water and need dishwasher salt and the right hardness setting. Without them, scale builds on the heater and glasses come out filmed. See Miele dishwasher repair.
• Clear-ice machines. They flush part of every batch to carry minerals away, yet the plate and pump still scale. Sub-Zero, for one, asks for its undercounter ice machine to be cleaned at least every six months, more often with hard water, plus a yearly cleaning by a technician. See ice maker repair.

A whole-house softener reduces scale, a plain filter does not, and neither ends the need to descale.

Summer heat and garage freezers

The marine layer burns off sooner a few miles inland, and late-summer afternoons on the ridges run hotter than at the beach. A refrigerator sheds heat into the air around it, so the hotter that air, the longer it runs, and a garage freezer or a built-in in a sunny kitchen works hardest then.
